    Okay so I decided to come here alone for lunch. As it turns out, I'm glad that I didn't bring a group. Certainly not much in the way of atmosphere to begin with. I elected to sit at the sushi bar.

    I thought I would keep it simple, so I ordered a 3 roll lunch combination (spicy tuna, salmon and eel) and additional couple pieces of nigri sushi. I opted for the salad rather than the miso soup. So far so good.

    The salad arrived promptly but I was amazed to see that it was not topped with the traditional raw ginger salad dressing one would expect to find in any good sushi restaurant. Instead it had a creamy dressing that I'm pretty sure was some kind of buttermilk ranch. Strike one.

    Sitting at the bar, I was able to watch my food being prepared and to see the ways they treat their ingredients. I was surprised to see that all of the sushi fish has been pre-cut, put on a plate and covered with Saran Wrap. This creates additional surface areas they can become oxidized and unfresh more quickly. The fillings for the spicy tuna rolls and others, have been pre-mixed in large batches and placed in plastic Deli tubs. When I think of a spicy tuna roll, I think of hand chopped tuna, like a Hawaiian tuna poke. Yes I realize that these typically come from the leftover cuts when preparing nigiri and sashimi. But this pre-made paste was obviously made in a food processor (God only knows when) and more closely resembled baby food than good sushi. Strike two.

    The eel was once again stored precut in a dish containing sauce. It was then heated in a microwave. Strike three.

    The rolls themselves, were very sloppily made. There was no uniformity in size and not even an attempt to cut off and discard the cigar butt ends of the salmon roll. The chefs do not use the traditional rolling mats in order to produce a tightly rolled roll. This makes the pieces fall apart easily (when using chopsticks to dip, chunks end up in the soy sauce) and appear larger than they actually are. Strike four.

    I gave this place 2 Stars rather than one because despite all of the shortcomings described above, the actual flavors of the food we're pretty good. I hope they do away with the shortcuts that prevent their food from being better. Precut fish and bulk-made, food processor fillings are the kind of things you see in fast-food, Sushi food trucks. Dragon Sushi does not have such a large number of customers that they don't have time to do it right. They will never make it if they continue to sacrifice quality. I hope that their management takes the time to actually read this review. I would like to see them be successful.
